Chicken Pasta Bake

This is a very simple chicken pasta bake recipe that is also cheap and good for the family.


Serves: 2
Prep. time: 10 mins
Cooking time: 35 mins


  • Pasta for 2
  • 2 chicken fillets, diced
  • 1 onion
  • 1 chicken stock cube
  • 1 tin chopped tomatoes
  • table spoon of tomato puree
  • 1 carrot, finely chopped
  • Broccolli
  • 1 courgette, chopped
  • Pasta sauce
  • Cheese, grated
  • 2 garlic cloves
  • Few teaspoons of dried mixed herbs
  • Cheese, grated

How to Make it:

  1. Cook the pasta as the packet says
  2. Meanwhile, heat oil in the pan and fry the onions and carrots for a few minutes
  3. Add the chicken and cook for a few minutes
  4. Add the garlic and stir for a couple of minutes
  5. Add the tomatoes, tomatoe puree, broccolli, courgettes, stock cube, herbs and mix.
  6. Simmer for 5 minutes then mix with the drained pasta
  7. Transfer to casserole dish (with lid on while heating)
  8. Cover with the grated cheese and sauce on top
  9. Place in a pre-heated oven at 180C for 25 mins.
